Enjoying Japanese tea in a variety of ways

Zushi Saryo Rindo(Zushi, Kanagawa)

Zushi Saryo Rindo is located in Zushi City, Kanagawa. During the day, it operates as a tearoom, while in the evening, it transforms into a bar, offering various ways to enjoy Japanese tea.

The owner, Mutsuki Yamamoto, originally from Kyoto, has a background in the food and beverage industry and holds certifications as a sommelier and sake sommelier. He also has experience as a sommelier at a Michelin four-star hotel in Hayama. Throughout his culinary career, Yamamoto has encountered various Japanese ingredients and cultures.
This exposure led him to appreciate Japanese tea culture, recognizing its deliciousness and cultural charm. He delved deeper into this by studying a tea ceremony and visiting tea-producing regions, thus enhancing his understanding of Japanese tea.

In May 2021, with the idea of delivering Japan’s traditional culture, history, and producers’ sentiments related to tea and alcohol to customers, Yamamoto opened Rindo.
During the day, a recommended choice is the “Seasonal Japanese Tea and Wagashi Afternoon Tea.” This Japanese-style afternoon tea offers three types of tea, light snacks, and seasonal confections. It provides an opportunity to savor the essence of Rindo and enjoy a condensed tea time experience.

Japanese tea is directly sourced from producers in various regions such as Shizuoka, Saga, Kyoto, and Fukuoka. Yamamoto meticulously selects tea leaves that highlight the individual characteristics of each variety, aiming for an appreciation similar to that of wine varietals.

When serving tea, Yamamoto introduces the tea’s story, including details about the producers and origin. He even shows customers the actual tea leaves, involving them in the tea selection process

In the evening, the tearoom transforms into a bar where carefully selected Japanese sake, shochu, Japanese wine, and more can be enjoyed. The dining concept follows the idea of a little bit of something delicious. Using seasonal ingredients, dishes are presented in small plates. Notably, Japanese tea can also be enjoyed during bar hours.

The interior offers counter seats, tables, and sofa seats, creating a relaxed and ideal environment for indulging in tea and alcohol.
